Laid-back, Love-filled and Bursting with DIY Details: Carol & Joel

We didn't know we needed cake swings in our lives until we saw this wedding!

The real wedding we're sharing today is such a lovely one, not least because it took place in 2019, when weddings featured heaving dance floors (thanks to The Beat Boutique, in this case!) Carol and Joel were engaged for seven years before they tied the knot at Mount Druid, and wisely used this time to think about what was most important to them, and come up with ways to echo these in their big day. With a focus on family (their two sons played key roles), photography (the talented Phil Voon of Give Us a Goo was behind the camera) and DIY details, their super stylish Mount Druid wedding is giving us all the feels!

Carol and Joel tell us that they have known each other for a whopping 27 years, and first met through a mutual friend. "Our circles of friends overlapped throughout the years, until I left for college, we then didn’t see each other as often," Carol says. "It wasn’t until 2009, on a very random night out, that we met again. Joel was having a party and asked would I like to go. We spent the evening catching up, so much so, we didn’t even notice the time go by - the majority of people had left! It felt like we were the only two in the room. We kept in touch and agreed to meet the weekend after. Our first date was on a cold Sunday in Dublin Zoo, and, as the saying goes, it just grew from there!"

Three years later, the couple got engaged during a holiday to Cyprus. Joel recalls, "We went for a beautiful evening walk on the beach, and got as far as Aphrodite’s Rock (the birthplace of the Greek Goddess of Love). As we sat down to watch the sun setting over the Mediterranean, to Carol’s surprise, I asked her to marry me. Thankfully she said yes!" But this couple didn't rush their wedding - on the contrary, they waited 7 years to make it official!

From the beginning, this couple had some very achievable goals for their wedding. "We wanted our day to reflect us and to make sure everyone had plenty to eat, drink and were merry!" Carol says. A great photographer was next on their list. "We wanted someone special to capture it," Carol says, "and Phil Voon of Give Us a Goo photography was our only choice, and, in fact, was the first supplier we booked after securing Mount Druid as our venue! Phil had also been my sister’s photographer a few years previously, and we knew even then that he was the one!"

Carol and Joel were also keen to include their friends and family members in their day. "It was very important to us that our two boys be involved in our day, along with family and friends, some of whom read poems for us like, 'I Want to Grow Old with You' from the Wedding Singer. It was also important that Carol’s mother, who passed away in 2007, was remembered on the day. We did that in the form of lighting a candle at the beginning of the ceremony, and also had another at the reception."

It took the couple no time at all to fall in love with Mount Druid. "From the moment we made contact, to viewing, we knew this was the one," Carol says. "Eleanor, Margaret, Adrian and family made us feel so welcome and part of the family. You felt like the venue was yours completely. Nothing was too big or small to ask. What was also great about Mount Druid was everything was on site. The accommodation was stunning and fun. The Tin Chapel was a beautiful setting to get married in, with a short stroll from there to the boathouse for drinks and then onto the barn. The décor was absolutely stunning, which made it a plus as you didn’t have to add much more to it."

How gorgeous are the couple's sons, Faolán and Odhrán!? Carol tells us, "For us, to have our two beautiful boys witness their parents get married was very special. To have our wonderful celebrant, Emma Sides from the Humanist Association of Ireland, who delivered our eldest son's naming ceremony so beautifully in 2013, it was only fitting that she would be our first and only choice to marry us. We also involved our nieces and nephews with our handfasting, with our boys tying the final knot."

These gals look just fabulous, don't they!? Carol's embellished dress is the Hava gown by Willowby by Waters, while her bridesmaids are dressed in Adrianna Papell.

Carol and Joel describe their big day as, "Laid-back, filled with love, family, friends, good times and memories, just a fun-filled day from the beginning until the very end."

Carol's advice to engaged couples is to create, "Lists, lists and more lists! It's never to soon to start planning or looking. When you make your decision, stick with it. Go with what you both want, and not what others want. Most of all, enjoy the process, the buzz and excitement. It will all work out in the end!"

For their honeymoon, the couple wend to New York, Washington DC and Philadelphia. Carol says, "They aren't your typical Honeymoon destinations, but it was definitely the best decision for us. We got from city to city by train. It was a wonderful trip and would recommend it to anyone."

Can you believe that Joel made this incredible copper cake swing, and Carol made the couple's Spiced Apple and Salted Caramel-frosted cake?! Is there anything this pair can't do!? Carol tells us, "A lot of time was spent printing the names of our guests onto tags with a sprig of rosemary, which we loved, as it personalised the tables. We used lavender and rosemary also to decorate the cake. We also both decorated the table plan stand at home... which was great fun to transport to the venue!" I'll bet!

Carol’s sister Maggie designed and made the invitations, table plan, guest board and signage, while Carol's niece Martha sang and played guitar at the reception. What a talented family!
